Newlyn Fermentary founder, Rachel, will be joining us on March 23rd to share her knowledge and passion for fermented drinks with a focus on water kefir.


Water kefir is a naturally sparkling drink made with probiotic cultures. The cultures are called grains, crystals or tibicos and apparently originate from Mexico from the leaves of the prickly pear plant. They are essentially a Symbiotic Culture Of Bacteria and Yeast - or SCOBY (a term you may have heard before if you are familiar with Kombucha). We’ll learn about the 2 stage process of making water kefir and the many wonderful botanical extracts you can add to create a delicious sparkling drink that supports your immune system, and you'll create your own water kefir to take home and enjoy! 


There will also be a Tepache’ demo, a naturally fermented pineapple ‘beer’ made using wild yeast found on the pineapple skin.


Guests are invited to join us for a two course brunch featuring seasonal kraut and kimchi from Newlyn Fermentary for a supplementary fee.
